Creamed celery root is a smooth and celery forward side that has a more refined and developed flavor that mashed potatoes.
- Peel the celery root and cut into 1" squares. Place in a pot, cover with water and bring to a boil. Boil until tender - approximately 15 to 20 minutes.
- Saute garlic in butter until soft.
- Blend root with whipping cream, cream cheese and garlic mixture. Salt and pepper to taste.
This side dish is an excellent replacement for mashed potatoes or other starches. It's wonderful with braised meats, pork belly, and other rich foods.
