Potato pancakes, draniki, deruny, latkes, raggmunk or boxties are shallow-fried pancakes of grated or ground potato, matzo meal or flour and a binding ingredient such as egg or applesauce, often flavored with grated garlic or onion and seasoning.

  • Rinse shredded potatoes in cold water to remove as much starch as possible
  • Squeeze as much water as possible out of the potatoes and set to dry on a paper towel
  • Wisk egg and flour together
  • In a large bowl combine the potatoes and egg mixture
  • Eat oil in a large frying pan over medium-high heat
  • Using two spoons, scoop out portions (approx. 1/2C) into the hot oil
  • When edges browned flip over and cook remaining side
  • Place finished latkes on a paper towel or grate, salt
  • Serve with apple sauce and/or sour cream and chives
