Toscana Soup

Ingredients
  • 1 lb bulk Italian sausage
  • 4 slices of bacon
  • 1 head of cauliflower (cut into small pieces)
  • 6 cup beef stock
  • 1 diced small onion
  • 3 cloves of garlic
  • 1 cup heavy whipping cream
  • 10 oz fresh spinach
  • salt & pepper
  • Parmesan cheese
  • crushed red pepper flakes
Instructions
  1. Brown bacon and sausage in a large pot
  2. Add onion and garlic and cook until soft
  3. Stir in cauliflower and beef stock and cook for 15 minutes
  4. Stir in heavy whipping cream
  5. Add spinach and cook for about 5 minutes
  6. Serve with Parmesan and red pepper fakes.
