Creamed celery root is a smooth and celery forward side that has a more refined and developed flavor that mashed potatoes.
Creamed Celery Root
Peel the celery root and cut into 1" squares. Place in a pot, cover with water and bring to a boil. Boil until tender - approximately 15 to 20 minutes.
Saute garlic in butter until soft.
Blend root with whipping cream, cream cheese and garlic mixture. Salt and pepper to taste.
