A friend of ours posted a similar recipe on Facebook. It looked fantastic. It was.  A great recipe for fall and winter dinners.  It’s amazing as a leftover.

Green Chile Relleno Soup

Difficulty: Medium Prep Time 20 min Cook Time 360 min Total Time 6 hrs 20 mins Servings: 8

Instructions

  1. Add the main ingredients (excluding Mixing Ingredients) to crockpot and cook for 6 to 8 hours

  2. Remove and shred the chicken

  3. Discard the bay leaves

  4. Add a few ladles of broth to a blender or food processor and add the cream cheese. Blend until incorporated

  5. Return cream cheese mixture and shredded chicken to slow cooker and stir in shredded cheddar cheese

Note

We typically serve this with roasted green chiles on the side because some just like it hot!
