Potato pancakes, draniki, deruny, latkes, raggmunk or boxties are shallow-fried pancakes of grated or ground potato, matzo meal or flour and a binding ingredient such as egg or applesauce, often flavored with grated garlic or onion and seasoning.

  1. Rinse shredded potatoes in cold water to remove as much starch as possible

  2. Squeeze as much water as possible out of the potatoes and set to dry on a paper towel

  3. Wisk egg and flour together

  4. In a large bowl combine the potatoes and egg mixture

  5. Eat oil in a large frying pan over medium-high heat

  6. Using two spoons, scoop out portions (approx. 1/2C) into the hot oil

  7. When edges browned flip over and cook remaining side

  8. Place finished latkes on a paper towel or grate, salt

  9. Serve with apple sauce and/or sour cream and chives
