Green Chile Relleno Soup

A friend of ours posted a similar recipe on Facebook. It looked fantastic. It was.  A great recipe for fall and winter dinners.  It's amazing as a leftover.

    Main Ingredients
  • 2 lb boneless chicken breasts
  • 5 poblano peppers (diced)
  • 4 cup chicken broth
  • 1/2 cup onion (diced)
  • 2 bay leaves
  • Mixing Ingredients
  • 8 oz cream cheese
  • 8 oz sharp cheddar cheese (shredded)
  • salt & pepper (to your taste)
  • green chiles (to your taste)
  1. Add the main ingredients (excluding Mixing Ingredients) to crockpot and cook for 6 to 8 hours
  2. Remove and shred the chicken
  3. Discard the bay leaves
  4. Add a few ladles of broth to a blender or food processor and add the cream cheese. Blend until incorporated
  5. Return cream cheese mixture and shredded chicken to slow cooker and stir in shredded cheddar cheese
Recipe Notes

We typically serve this with roasted green chiles on the side because some just like it hot!
