Rare: 110F (final temp about 120F)
Medium/Rare: 120F (final temp about 135F)

  • Preheat the smoker to 225F. Put the drip pan on the bottom shelf.
  • Place the roast on a plate and rub with olive oil.
  • Rub Montreal spice all over the roast, and allow it to reach room temperature before roasting (approximately three hours)
  • Place roast into the smoker and assume about 40 minutes per pound to reach an internal temperature of 131F. Time may vary a little, the important thing is the internal temperature. Once the internal temperature is reached, remove the roast and wrap it in heavy foil. let it rest for up to 1 hour in a cooler wrapped in foil and covered in towels. Rare = 126 M Rare = 131 Medium = 136
