corn tortillas

shredded cheddar cheese
or a mix of cheddar and Monterey Jack

enchilada sauce
we prefer Macayo's

chopped onion

chopped black olives
optional

chopped fresh cilantro
optional for serving

sour cream

green onions

Lime wedges

Instructions
Preheat your oven to 375°F
In a skillet, heat the enchilada sauce over low heat until warm.
Dip each tortilla in the warm enchilada sauce to coat both sides, then place on a plate.
Sprinkle a handful of cheese and some chopped onion down the center of each tortilla. Add black olives if desired.
Roll up the tortillas and place them seam-side down in a baking dish.
Pour the remaining enchilada sauce over the rolled tortillas.
Sprinkle the remaining cheese on top.
Bake for 20-25 minutes, until the cheese is melted and bubbly.
Serve hot, garnished with sour cream, cilantro and lime wedges.
