Place the new gold potatoes in a large pot and fill with water. Season generously with salt. Place on high heat and boil until a sharp knife easily pierces the potatoes.
When the potatoes are cooked, drain and place them on a greased rimmed baking sheet. Gently flatten each potato to approximately 1/2" with a potato masher or wooden spoon.
Heat oil in a large skillet to 350℉. gently place flattened potatoes into oil and cook until browned. Flip and brown other side. Place browned potatoes on rack to drain.
Put garlic salt, parmesan, pepper into a large bowl. Toss potatoes to coat with seasoning.
