Instructions
In a small bowl, mix together the olive oil, minced garlic, salt, pepper, paprika, and dried thyme.
Rub the mixture evenly over both sides of the flat iron steaks.
If you like, place a sprig of fresh rosemary on each steak for extra aroma.
Preheat your grill to medium-high heat.
Place the steaks on the grill and cook for about 4-5 minutes per side for medium-rare, adjusting the time based on your preferred doneness.
Remove the steaks from the grill, wrap them in foil, and let them rest for 15 minutes to allow the juices to redistribute.
Drizzle with fresh lemon juice if desired.
