Ingredients
- 4 flounder fillets
Stuffing
- 1/2 lb shrimp peeled, deveined, and chopped
- 2 tbsp olive oil
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped celery
- 1/4 cup finely chopped red bell pepper
- 2 garlic cloves minced
- 1/4 cup breadcrumbs
Serving
- 1 tbsp fresh parsley chopped
- 1 tbsp fresh lemon juice
- salt and pepper to taste
- lemon wedges for serving
Instructions
- Preheat your oven to 375°F
- Heat the olive oil in a skillet over medium heat. Sauté the onion, celery, and bell pepper until soft, about 5 minutes. Add the garlic and cook for another minute.
- Add the chopped shrimp to the skillet and cook until pink, about 2-3 minutes. Remove from heat and stir in the breadcrumbs, parsley, lemon juice, salt, and pepper.
- Place the flounder fillets on a baking sheet. Spoon the shrimp stuffing onto each fillet and roll them up, securing with toothpicks if necessary.
- Bake for 20-25 minutes until the flounder is opaque and flakes easily with a fork.
