  • 1/2 cup olive oil
  • 1/4 cup lemon juice
  • 3 cloves garlic minced
  • 1/4 cup fresh parsley chopped
  • 1/2 cup Italian-style breadcrumbs
  • 1/2 cup Parmesan cheese grated
  • salt and pepper to taste
  • wooden skewers soaked in water for 30 minutes

Lemon Butter Sauce

  • 1/2 cup unsalted butter
  • 1/4 cup fresh lemon juice
  • 1 tbsp fresh parsley chopped
  • 2 cloves garlic minced
  • 2 tbsp Parmesan cheese grated
  • Salt and pepper to taste

  • Prepare the Marinade: In a bowl, mix olive oil, lemon juice, minced garlic, parsley, salt, and pepper.
  • Marinate the Chicken: Cut the chicken into bite-sized pieces and marinate them in the olive oil mixture for at least 30 minutes. Over night preferred.
  • Bread the Chicken: In another bowl, mix breadcrumbs and grated Parmesan cheese. Coat the marinated chicken pieces in the breadcrumb mixture.
  • Skewer the Chicken: Thread the chicken pieces onto the soaked wooden skewers.
  • Cook: Grill the skewers over medium-high heat for about 8-10 minutes, turning occasionally, until the chicken is cooked through and the breadcrumbs are crispy and golden.
