Boil livers in water in a small saucepan until firm. Chop livers into ½” cubes
Cook bacon until crispy in a large skillet
Remove bacon and add pork and beef and season with Tony’s cook until browned. Remove into large bowl
In skillet sauté bell pepper, onion, garlic, and celery. Once translucent, add bacon, beef, pork, and liver back into skillet.
Cook and stir for a moment to let the flavors mix. At this moment I taste to make sure there’s enough Tony’s…I always add more Tony’s.
The meat mixture…there’s enough to make 3 or 4 batches of dirty rice.
