Thanksgiving eggrolls are a modern twist on repurposing leftovers. The concept evolved recently, blending American Thanksgiving flavors with Asian eggroll techniques. 🥟

Ingredients
  

  • 1 or 2 pkg eggroll wrappers more packages if you've got a big crowd
  • 1 1 egg beaten (for sealing)
  • oil for frying

Turkey Mix

  • leftover Brined & Smoked Turkey shredded
  • leftover Nonna's Stuffing
  • leftover Mashed Potatoes
  • leftover Green Bean Casserole

Pie Mix

  • leftover pumpkin pie

Instructions
 

  • Mix the Turkey Leftovers: shredded turkey, stuffing, mashed potatoes, and green bean casserole in the center. Set aside.
  • Assemble the Turkey Eggrolls: Lay an eggroll wrapper on a clean surface. Place a small amount of the Turkey mix in the center.
  • Mix the Pie Leftovers: Remove crust from outer edge of pie and stir pie in a large bowl to roughly blend pie filling and crust. (If outer edge of crust is left on, the filling is a little dry.)
  • Assemble the Pie Eggrolls: Lay an eggroll wrapper on a clean surface. Place a small amount of the Pie mix in the center.
  • Roll the Eggrolls: Fold the bottom corner of the wrapper over the filling, then fold in the sides. Roll tightly towards the top corner. Brush the top corner with beaten egg and seal the eggroll. Set aside.
  • Heat the Oil: Heat oil in a deep skillet or frying pan to 350°F (175°C).
  • Fry the Eggrolls: Fry the eggrolls in batches until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels. (Pie eggrolls can be dusted with cinnamon sugar)
  • Serve: Serve Turkey eggrolls hot with leftover gravy for dipping. Serve Pie eggrolls with ice cream or whipped cream.
