Crispy New Potatoes

It’s the perfect combo: crispy edges, fluffy inside, garlic salt’s bold flavor, and Parmesan’s savory kick. It’s like a potato party! Seriously though, when the natural creaminess of the potatoes meets those rich, intense flavors, it’s a recipe for pure culinary joy. There’s something so satisfying about that crunch followed by a soft, melt-in-your-mouth center. Hard to beat! 😋

Crispy New Potatoes

Ingredients
  

  • 24 oz new gold potatoes any waxy new potato will do
  • 1/2 cup olive oil
  • 1 tbsp garlic salt
  • 1 tbsp fresh cracked black pepper
  • 2 tbsp grated Parmesan cheese

Instructions
 

  • Place the new gold potatoes in a large pot and fill with water. Season generously with salt. Place on high heat and boil until a sharp knife easily pierces the potatoes.
  • When the potatoes are cooked, drain and place them on a greased rimmed baking sheet. Gently flatten each potato to approximately 1/2" with a potato masher or wooden spoon.
  • Heat oil in a large skillet to 350℉. gently place flattened potatoes into oil and cook until browned. Flip and brown other side. Place browned potatoes on rack to drain.
  • Put garlic salt, parmesan, pepper into a large bowl. Toss potatoes to coat with seasoning.
  • Garnish with parsley or chopped chives
