Equipment

  • Masterbuilt Gravity Series 800

Ingredients

  • 1 cup mayonnaise
  • 1/3 cup apple cider vinegar
  • 2 tbsp fresh lemon juice
  • 1 tbsp prepared horseradish
  • 1 tbsp Dijon mustard
  • 1 tbsp Worcestershire sauce
  • 1 tsp hot sauce or 1/4 tsp cayenne
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 –2 tsp sugar or honey optional, for balance

Instructions

  • In a medium bowl, whisk together the mayo, vinegar, and lemon juice until smooth.
  • Add horseradish, Dijon, Worcestershire, and hot sauce. Whisk to combine.
  • Season with garlic powder, onion powder, salt, and black pepper.
  • Taste and adjust: add more vinegar for tang, more horseradish for bite, or a touch of sugar/honey to round the acidity.
  • Refrigerate at least 30 minutes to let the flavors settle. Sauce thickens slightly as it chills.
  • Use as a dunking sauce for smoked chicken, a finishing glaze, or a marinade to keep poultry juicy.
