I created this recipe when we were camp hosting in Sedona. The Meat Mixture can be split into 4 individual Food Saver baggies and frozen for later use. It’s great for either a low carb diets or regular dirty rice. Either way it tastes like it came from traditional Cajun kitchen!
Dirty Rice
Ingredients
Meat Mixture
- .5 lb Bacon chopped
- 1 lb Pork ground
- 1 lb Beef ground
- 1 ld Chicken liver cooked and chopped
- 1 cup Green pepper diced
- 1 cup Yellow onion diced
- 1 cup Celery diced
- 2 tbsp Parsley chopped
- 4 tbsp Garlic minced
- 2 tbsp Tony Chachere's Original Creole Seasoning
Regular Dirty Rice
- 4 cup Cooked rice
- 2 cup Meat mixture
- 1/4 cup Butter
- 2 tbsp Green onions sliced
Low Carb Dirty Rice
- 2 Jalapenos diced
- 1/4 lb Bacon diced
- 4 cup Riced Cauliflower frozen
- 2 tbsp Green onions sliced
Instructions
Meat Mixture
- Boil livers in water in a small saucepan until firm. Chop livers into ½” cubes
- Cook bacon until crispy in a large skillet
- Remove bacon and add pork and beef and season with Tony’s cook until browned. Remove into large bowl
- In skillet sauté bell pepper, onion, garlic, and celery. Once translucent, add bacon, beef, pork, and liver back into skillet.
- Cook and stir for a moment to let the flavors mix. At this moment I taste to make sure there’s enough Tony’s…I always add more Tony’s.
- The meat mixture…there’s enough to make 3 or 4 batches of dirty rice.
Regular Dirty Rice
- Combine 4 cups of cooked rice with 2 cups of Meat Mixture
- Melt 1/4 cup butter in a skillet or large frying pan
- Add the Meat and Rice Mixture to the pan and thoroughly heat
- Top with green onions
Low Carb Dirty Rice
- In large skillet sauté bacon and jalapenos until bacon is crispy
- Add riced cauliflower and cook until cauliflower loses its earthy/green flavor.
- Add meat mixture to cauliflower rice mixture and continue to heat
- Top with sliced green onions
