Thai Cucumber Salad

  • 3 Large Cucumbers Peeled, halved, seeds removed, and thinly sliced
  • 1 tbsp Salt
  • 1/2 cup Sugar
  • 1/2 cup Rice wine vinegar
  • 2 Jalapenos Seeded and finely chopped
  • 1/4 cup Cilantro Finely chopped
  • 1/2 cup Peanuts Finely chopped


  • Toss cucumber and salt in colander and let drain for 30 minutes in sink.
  • Wisk vinegar and sugar in a bowl until sugar dissolves, then toss with Cilantro.
  • Add peanuts before serving
