Roasted Cabbage


  • 1 medium cabbage
  • 1/2 cup butter room temperature
  • 1 tbsp garlic roasted
  • 1 tsp chives thinly sliced
  • 1 tbsp Dejon mustard
  • 2 tbsp olive oil


  • Preheat air fryer to 350.
  • Mix butter, mustard, chives, olive oil, salt and pepper to a small bowl. Use a fork to mix together to create a paste. Set aside.
  • Add a drizzle of olive oil over a large sheet pan, then add the cabbage rounds one at a time, swirling them on the bottoms to coat in oil.
  • Add the butter evenly to the rounds, then generously coat the tops and sides. Season with salt and pepper and roast for about 5 minutes, flipping halfway. After 5 minutes, flip them back over. Roast for another 2-3 minutes, until tender and crisp on the edges. **Note: if the edges are getting too dark, then cover with foil for the remaining time.
  • While the cabbage roasts, make the ranch. Add the tahini, yogurt, lemon juice, chives, dill, salt, garlic powder, pepper and water. Mix to combine. For thinner consistency, add more water one tsp at a time.
  • Top with the ranch, chives, pistachios and red pepper flakes.
