Cheese Enchiladas
Ingredients
- 10 corn tortillas
- 3 cup shredded cheddar cheese or a mix of cheddar and Monterey Jack
- 2 cup enchilada sauce we prefer Macayo's
- 1/2 cup chopped onion
- 1/2 cup chopped black olives optional
- 1/4 cup chopped fresh cilantro optional for serving
- 1/4 cup sour cream for serving
- 1/4 cup green onions sliced
- Lime wedges for serving
Instructions
- Preheat your oven to 375°F
- In a skillet, heat the enchilada sauce over low heat until warm.
- Dip each tortilla in the warm enchilada sauce to coat both sides, then place on a plate.
- Sprinkle a handful of cheese and some chopped onion down the center of each tortilla. Add black olives if desired.
- Roll up the tortillas and place them seam-side down in a baking dish.
- Pour the remaining enchilada sauce over the rolled tortillas.
- Sprinkle the remaining cheese on top.
- Bake for 20-25 minutes, until the cheese is melted and bubbly.
- Serve hot, garnished with sour cream, cilantro and lime wedges.
