Ingredients
  

  • 10 corn tortillas
  • 3 cup shredded cheddar cheese or a mix of cheddar and Monterey Jack
  • 2 cup enchilada sauce we prefer Macayo's
  • 1/2 cup chopped onion
  • 1/2 cup chopped black olives optional
  • 1/4 cup chopped fresh cilantro optional for serving
  • 1/4 cup sour cream for serving
  • 1/4 cup green onions sliced
  • Lime wedges for serving

Instructions
 

  • Preheat your oven to 375°F
  • In a skillet, heat the enchilada sauce over low heat until warm.
  • Dip each tortilla in the warm enchilada sauce to coat both sides, then place on a plate.
  • Sprinkle a handful of cheese and some chopped onion down the center of each tortilla. Add black olives if desired.
  • Roll up the tortillas and place them seam-side down in a baking dish.
  • Pour the remaining enchilada sauce over the rolled tortillas.
  • Sprinkle the remaining cheese on top.
  • Bake for 20-25 minutes, until the cheese is melted and bubbly.
  • Serve hot, garnished with sour cream, cilantro and lime wedges.
