Ingredients
  

  • 2 medium zucchinis
  • 2 tbsp olive oil
  • 2 garlic cloves minced
  • Salt and pepper to taste
  • 1 tsp dried Italian seasoning optional
  • Fresh lemon juice
  • Grated Parmesan cheese optional

Instructions
 

  • Preheat your grill to medium-high heat.
  • Slice the zucchinis lengthwise into 1/4-inch thick strips.
  • In a Ziplok bag, combine the olive oil, minced garlic, salt, pepper, and Italian seasoning.
  • Put the zucchini slices into the bag with the olive oil mixture and massage to cover.
  • Place the zucchini slices on the grill and cook for about 2-3 minutes per side, or until tender and grill marks appear.
  • Remove from the grill and drizzle with fresh lemon juice.
  • Sprinkle with grated Parmesan cheese if desired.
