Molasses Cake

    Mix together and reserve one cup for the topping
  • 4 cup flour
  • cup butter
  • 2 cup sugar
  • Moist Ingredients
  • 1 egg
  • 1 cup molasses (I prefer Brer Rabbit Green Label)
  • 2 cup boiling water
  • 1 tbsp baking soda
  1. Heat oven to 350F and put two cups water on to boil.
  2. Butter and flour a 9 x 13 cake pan.
  3. In a large bowl, mix topping ingredients together with hands until the mixture begins to easily clump.
  4. Set aside one cup of this mixture for the topping.
  5. Mix in the baking soda and egg.
  6. Pour 2 cups of boiling water and 1 cup of molasses into a separate bowl and mix together
  7. Wisk the molasses and boiling water into the cake mixture.
  8. Pour the cake batter into the cake pan and evenly sprinkle the topping mixture over the cake.
  9. Cook until a toothpick test comes out clean (about 40 to 45 minutes)
